Gỏi lưỡi heo trộn ngó sen với lưỡi heo được luộc chín tới giòn giòn, được trộn với ngó sen và cà rốt, quyện với mùi thơm của húng quế, rau thơm, điểm thêm chút vị cay nồng của ớt.
Lưỡi heo rửa sạch với nước muối pha loãng, chần sơ qua nước sôi. Sau đó lấy ra cạo sạch phần cặn trắng của lưỡi, rửa lại cho thật sạch.
Ngó sen rửa lại cho thật sạch, dùng tay tước sợi, trộn vào ngó sen 1 muỗng cà phê muối, 1 muỗng cà phê đường,1 muỗng cà phê giấm, để khoảng 30 phút. Sau đó dùng tay vắt ráo nước, để lên rổ cho ráo nước. Húng quế lấy lá, rửa sạch.
Cà rốt rửa sạch, bào vỏ, cắt sợi. Trộn vào cà rốt 1/2 muỗng cà phê muối, trộn đều để yên khoảng 15 phút, sau đó vắt ráo.
Cho lưỡi heo vào nồi, luộc chín rồi cắt nhỏ.
Tỏi, ớt giã nhuyễn. Pha 2 muỗng canh nước mắm, 2 muỗng canh đường, 1 muỗng canh nước cốt chanh. Thêm tỏi, ớt đã giã vào, khuấy đều làm nước trộn gỏi.
Trộn ngó sen, cà rốt, lưỡi heo trong tô lớn. Thêm húng quế và nước trộn gỏi vào, trộn đều lên là được.
